Jiménez ist mit dem Schauspieler Vin Diesel liiert. Am 2. April 2008 brachte Paloma Jiménez die Tochter des Paares, Hania Riley, zu Welt.

Jiménez machte unter anderem Werbung für Coca Cola, Pantene und Honda, und zierte verschiedene Cover von internationalen Magazinen, darunter im Januar 2005 die Titelseite der mexikanischen Maxim Ausgabe.
